An organic Natural Special from the south of Peru, from the Incahuasi cooperative.

Incahuasi's 500-plus members grow their arabica at 1,800 – 2,400 metres altitude beneath the snow-capped Choqesafra mountain in Cusco. Communal processing stations and ancestral Andean traditions such as ayni and minca yield a pronounced cup full of wild berries, strawberry jam, apple and hints of dried rose petals.

About the farmer

Incahuasi, founded in 2005 under the leadership of manager Claudio Ortiz Osis, is a cooperative in the south of Peru and home to around 500 members across 13 committees — 11 in Inkawasi (Cusco) and 2 in Ayacucho. With well-structured collaboration and communal processing stations, the cooperative plays a key role in supporting producers with limited individual resources across the Cusco region.

The cooperative sits beneath the snow-capped Choqesafra mountain in Inkawasi. Each producer typically manages around 1.5 hectares of coffee, with an average productivity of 2,200 kg per hectare.

Communal processing stations are central to Incahuasi's success: they provide essential infrastructure for farmers who would otherwise lack the means to process their own coffee. Using GrainPro fermentation bags among other methods, the cooperative is beginning to see promising results.

The collective harvest reflects ancestral Andean practices such as ayni and minca — important values inherited from the Inca. The farmers rely on shade-grown systems, irrigation and soil conservation, producing high-quality arabica with a balance of body, sweetness, acidity and aroma.
